So you all know I am obsessed with China and pretty much all things Asian. I love going to Asian markets and looking at all the fun weird foods and pretending I still live there. Yesterday I went to this tiny little Asian market in Provo to look for steamed rolls to make for a Chinese New Year party my sister is having on Saturday. They didn't sell them, so I just wandered around looking at the different kinds of noodles they sold. I found a package of yummy looking noodles and decided that I should use my new Wok and make fried noodles for dinner with Todd and our friends, Bree and Cory.
The only problem I had was that I had no idea what spices and oils to use and how to go about making the noodles. Luckily, the little Chinese lady that works there is really nice and approachable. I asked her how I would go about making fried noodles and what ingredients I should use. She immediately started telling me step by step directions on how she makes them and started putting things into my grocery basket. It was so great! I couldn't wait to get home and start cooking them!
I didn't use any measurements. I just kind threw stuff into the wok as I went along. I ordered fried noodles in China street markets all the time so I tried to remember how they made it.
{Street Market Fried Noodles}
You can add more veges and spices to taste. This is how I made them and the steps I went through. Mine made enough noodles for four people.
-Chili garlic sauce (pictured above)
-Oyster Sauce
-Garlic
-Sprouts
-Uncooked fried noodles
-Carrots
-Cabbage
-3 eggs
-Sugar
-Vegetable Oil
- Boil water in a pot for the noodles.
- Mince three cloves of garlic.
- Chop two large carrots into small chunks.
- Wash cabbage and tear into small pieces.
- Wash sprouts and cut off the ends.
- When water is boiling, add fried noodles and cook until "al dente". Drain and set aside.
- Heat wok with medium heat. Add vegetable oil to cover the bottom of the pan.
- Saute garlic until light brown.
- Crack three eggs into the wok and scramble them.
- Add carrots- then noodles- then cabbage and sprouts.
- Add oyster sauce, chili garlic sauce, and a few spoonfulls of sugar.
- Mix it all around until steamy and hot. Taste and add more of whatever you want.
- Serve in bowls and eat with chopsticks!
This might seem like a lot, but it's super easy and SO fun to cook! Bree and I had a blast deciding what to add next to the wok. It turned out so tasty and we ate every last noodle. And since I bought everything at the Asian market, it was super cheap!
